Transforming leftover Christmas chocolates into homemade chocolate squares

After the Christmas clean-up is done, we always end up with the leftover “unpopular” chocolates, that nobody really wants. They are the remnants from all the Christmas gift boxes from family gatherings and presents. They can so easily sit in the cupboard, forgotten and going out of date.

A great solution is to turn those leftover chocolates into something even more delicious, by making your own homemade Chocolate Box Squares!

In our house we always seem to have lots of fudge ones, milky ways and caramels but you can literally use any type of chocolates for this recipe.

Ingredients:

200g Leftover Chocolates (chopped up)

100g Butter (diced)

100g Rice Krispies (or cornflakes, nuts, seeds, etc.)

200g Chocolate for Topping (I like 50:50 milk:dark)

Method:

Step 1: Chop the leftover chocolates into smaller, uniform pieces to ensure they melt evenly. If you have filled chocolates or truffles, don’t worry about the filling—it will melt into the mix, adding extra flavour.

Step 2: Put the chocolates in a heatproof bowl and add 100g of butter. Place the bowl over a pot of gently simmering water (be careful not to let it get too hot or it will burn the mixture). Stir the mixture and if you have a small whisk or fork that will help to bring it all together.

Step 3: Once melted, take if off the heat and mix in the Rice Krispies.

Step 4: Line a small baking dish or tray with parchment paper. Pour the melted chocolate mixture into the dish, spreading it out evenly and pressing it down to compact it.

Step 5: Place the tray in the refrigerator for about 30 minutes.

Step 6: Melt the chocolate for the topping. Take the tray out of the fridge and spread the melted chocolate on top. Put it back in the fridge for another 30 mins/1 hour.

Step 7: Once your chocolate has hardened, carefully lift the parchment paper out of the tray and place it on a cutting board. Using a sharp knife, cut it into small squares.

Storage: Store your homemade Chocolate Box Squares in an airtight container in the fridge.

Food Waste Tip:

These are great for playdates or bringing into the office to cheer everyone up on a Monday morning! However, this recipe makes quite a small batch, so there may not be any left to share!
