An easy and versatile sauce and a great way to use up stray tomatoes
I love this recipe as it's so easy to make and punches above its weight in terms of the taste. It's very versatile and I use it as a vegetarian pasta sauce, a pizza sauce or as a base for any tomatoe based dish such as my vegan beans or bolognese.
Ingredients:
500g tomatoes
3 x garlic cloves finely chopped (adjust to your own taste)
0.5 tablespoon olive oil
0.5 teaspoon caster sugar
Salt
Pepper
(Optional : 0.5 tsp mixed dried herbs)
Method:
Put the tomatoes, garlic and olive oil in a saucepan over a medium heat. Cover and cook for 10 mins, shaking occasionally, until the tomatoes have softened completely.
Season generously with salt and pepper and then add the sugar. Remove the lid and boil for 5 mins until the garlic is soft. Allow to cool and blend into a puree.
You can now pour the tomato sauce into sterilised glass jars and freeze it for up to 3 months, or keep in the fridge for up to 1 week.
This sauce can be used to make a vegetarian pasta, used as a pizza sauce or used in other dishes such as bolognese, soups, stews, etc.
