Mastering "beans" is key to a plant based diet


I’m trying to increase the plant based food in our diet and reduce meat. It’s requires more creativity, a lot of trial and error and also a good dose of patience!


Some of the things I’ve learned to far - beans are essential, cook your own beans if you can (it’s worth the effort as they are SO much better than canned), find interesting dressings/sauces, herbs and spices are absolutely essential to add more flavour and nuts for some texture.


It’s a journey and if you don’t try to change it all too quickly, I find the family is slowly coming around and starting to really enjoy some of the new dinners!


This is a recent hit in our house:


Ingredients:

240g Butter Beans (if I don't have time to make my own beans, I just use 1 can of beans strained)


Dressing:

3 x tablespoons Olive Oil (reduce for lower fat version)

2 x tablespoons Lemon Juice

3 x garlic cloves (adjust to your own taste)

2 x tablespoons herbs (parsley or coriander)

1 x teaspoon Dijon Mustard

Salt

Pepper


Method:

Whisk all the dressing ingredients together and pour over the beans.


This is a very simple recipe but very tasty. It makes a delicious, nutritious lunch served on toast and I also do is as a side serving at dinner.
